Pioneer Woman Recipe Overload

I think this is recipes 6-13. We did a tex-mex overload this month!

Brisket - to die for and not that hard to make. A little on the expensive side but yields TONS of meat.
Pico De Gallo and guacamole - So yummy! 
Tostadas - I will never eat store bought tostada shells again!
Cowboy Nachos - We ate this 5 days in a row because Jonathan couldn't get enough of them!
Chili Con Queso - best queso ever and freezes so nicely.
Beans and Cornbread - not bad for beans. I don't love beans but I must say that I would make these again.
Refried Beans - Jonathan said they were much better than canned beans but I don't think they are worth the work. They are good though.

Pioneer Woman: Recipe 5

Spaghetti with Artichoke Hearts and Tomatoes

My mom made this for me during a girls night in so I knew it would be good and I wasn't disappointed. My husband even said that he doesn't miss meat at all when it comes to this dish. MMM and I have left overs waiting for me in my fridge and we all know how yummy pasta is the second day once it gets a chance to soak in all the saucy goodness.

Pioneer Woman: Recipe 4

THE BEST LASAGNA. EVER!!!!!!
Yes, I yelled it from the roof tops. The world needs to know that this meaty, cheesy, pasta delight is heaven in a casserole dish. I am a self professed lasagna making flop and yet this recipe turned out perfect and brought tears to my husbands eyes. Yes, it does have cottage cheese in it but my husband (an avid death-to-all-cottage-cheese advocate) didn't care a bit. Try it you'll like love it!

Pioneer Woman: Recipe 2 and 3

Good Ol' Basic Mexican Rice

I stink at making rice that isn't instant. For some reason some of the rice grains always stay crunchy and this recipe was no different. It's not the recipe it's me. I'm sorry rice you and I can never be happy together ::puts finger up to the metaphorical rice lips:: shhhh it's not you baby, it's me. The recipe was good though! Despite the crunchy grains here and there. Fast and easy.

White Chicken Enchiladas

This was a pain in my ass to make. I put the chicken on to boil at noon and didn't finish till 4:30. Granted a lot of that time was spent boiling chicken and having a baby clinging to me didn't help make it any easier but still. I am sure the next time I do this recipe it will go faster. The first time making a recipe is always awkward and slow (for me at least). As far as taste goes, well it was out of this world. I bet I could use the same recipe but substitute pork for the chicken. The biggest plus is that it is SO filling. Two enchiladas and I was stuffed to the gills. We have enough for 3 more meals! All in all I think it was a pretty successful endeavor.

Pioneer Woman: Recipe 1

















If you don't like blue cheese and you can't stand onions then this is NOT the burger for you. However I do and I can so this was right up my alley. The Tabasco in the mayo is something I have been doing for awhile but I love it all the same. I didn't make a one pound burger because we are 1) on a budget and 2) sort of on a diet. Number 2 isn't really a good reason though when you take in to consideration all the mayo,  cheese and the big yummy kaiser rolls.  It was super easy to make and start to finish took less then 20 minutes. It's definitely on my make again list, in fact, we are having it again tomorrow!
