Beef Enchiladas

This is my moms recipe for enchiladas. I always loved them as a kid and now I make it as an adult when I want something cheesy and delicious!

Ingredients:
1 10 oz can of red enchilada sauce
20 corn tortillas
1 lb of ground beef
2.5 cups of grated cheddar cheese
1 small can of sliced black olives
1 16 oz jar of salsa
1 cup vegetable oil

Directions:
In a large skillet brown the meat. Drain away the excess fat and place the meat back in the pan. Pour half the jar of salsa over the ground beef and mix in well.
In a small pan heat oil over medium heat. When the oil become hot fry your tortillas for a few seconds on each side. You know they are ready to flip when they start to bubble in the middle. After you fry each tortilla place it on a paper towel to soak up the excess oil.
Next, fill each tortilla with one heaping spoon full of meat and place about a tsp of cheese on top. Roll the tortilla tight and place in a 9x13 cassarole dish. Do this with all the tortillas. Pour the enchilada sauce over the entire dish of rolled tortillas and spread around with the back of a spoon. Sprinkle your cheese over the top and then add the black olives. Bake in the oven at 425 for 15-20 minutes or until the cheese is fully melted and starts to bubble.
